This chocolate bar begins in the misty highlands of Papua New Guinea, where the Kamuri Estate lies nestled among fertile volcanic slopes. The estate is run by Kingston Kamuri, a dedicated grower whose commitment to quality and tradition has earned the respect of craft chocolate makers around the world.
Kingston carefully manages every step of production, from harvesting the cacao pods by hand to fermenting the beans in wooden boxes and sun-drying them on raised beds. His deep connection to the land and the crop yields cacao with a rich, earthy profile, gentle smokiness, and a naturally low acidity — ideal for pairing with spice.
In this bar, we grind Kingston’s cacao together with our house-blended chai: a warm and balanced mix of cinnamon, cardamom, star anise, black pepper, cloves, ginger, and Darjeeling tea. The result is a dark chocolate bar with complexity and soul-comforting spice layered over bold, grounding cacao, made for mindful savouring.
