A Funky Surprise I Didn’t See Coming

When I travelled to Chantaburi earlier this year, I didn’t expect to fall in love with Thai cacao. But then I met Boom, who runs her family’s small cacao farm with incredible care and quiet determination. Standing among her trees, tasting freshly fermented beans, I knew this origin had something special.

This single-variety hybrid was bred for productivity — but what it delivers in flavour is extraordinary. Bright notes of green apple, lime and peach lead the way, softened by chamomile and rounded out with balsamic and walnut. It’s complex, fruity, and a little funky in the most delightful way.

Thailand may still be a small player in the cacao world, but with passionate growers like Boom and beans like these, it’s quickly becoming one to watch.
